The frustrating thing is that the 3 pound packs are always the 85/15, and you can only get 1.25 lb packs of 93% and 99%. Fried chicken >>> fried turkey. Bison is a lot leaner and gamier tasting than beef. Depending on what you are making one can be better than the other. Bison is so much more expensive that beef is way way more common. I would say “fuck off” to ground bison but braised bison is delicious as hell.
